Iced Tea

Method:
1. The ratio of tea to water is 1 gram to 80 ml or 100 ml.
2. Pouring iced water.
3. Steeping for 7 to 8 hours.
4. Separating tea and water by option for a more refreshing tea soup.

Question:
What kind of tea can be brewed in iced water?
How come the tea steeps for such a long time?

Answer:
1. Besides pu'er tea, all kinds of tea can be brewed in iced water.
2. Tea tastes more astringent and bitter in boiling water, because more tannic acid and caffeine dissolve at higher temperature.
3. Tea contains trace amount of protein, therefore steeping tea in iced water for a long time should be stored in a refrigerator.
4. Iced tea gives the refreshing and sweet taste from the amino acid, however, the floral aroma is not so intense.

Advantages:
Simple and convenience.
